Inspired by the piloncillo syrup behind a beloved Mexican classic.

Before cochinitos de piloncillo become the soft, spiced cookies found in panaderías, they begin with a rich syrup of unrefined cane sugar, cinnamon, and anise. We started there, then layered in warm spices and vanilla to create a syrup that captures the comforting flavors of a neighborhood bakery, thoughtfully crafted for coffee.
